Granola Pakcakes

Ingredients:
  • 1 Tbsp. Country Crock® Simply Delicious, divided
  • 1/2 ripe banana
  • 1 egg white
  • 1 Tbsp. honey
  • 1 tsp. ground cinnamon
  • 1 tsp. vanilla extract
  • 1/2 cup quick cooking oatmeal
  • 1 Tbsp. chopped walnuts

Combine 1/2 tablespoon Country Crock® Simply Delicious, banana and egg white with fork in small bowl. Stir in honey, cinnamon, vanilla, then oatmeal and walnuts just until combined.

Melt remaining 1/2 tablespoon Country Crock® Simply Delicious in small nonstick skillet over medium-high heat. Spoon oatmeal mixture into skillet, forming two pancakes. Cook pancakes, turning once, until golden brown.

Warm Fruit-Topped Country Oatmeal

  • 2 Tbsp. Country Crock® Simply Delicious, divided
  • 3 Tbsp. firmly packed light brown sugar, divided
  • 2 apples, peeled and sliced
  • 1/4 cup apple juice
  • 1/4 cup raisins
  • 1/4 cup chopped walnuts
  • 1/2 tsp. apple pie spice or ground cinnamon
  • 4 cups hot old fashioned oatmeal, prepared with water according to package directions

Melt 1 tablespoon Country Crock® Simply Delicious in large nonstick skillet over medium heat. Add 2 tablespoons brown sugar, apples, apple juice, raisins, walnuts and apple pie spice. Cook, stirring occasionally, 5 minutes or until apples are tender.

Stir remaining 1 tablespoon Country Crock® Simply Delicious and 1 tablespoon brown sugar into hot prepared oatmeal. Top oatmeal with warm apple mixture.

Buttery Berry Pancakes

  • 1 cup all-purpose flour
  • 2 tsp. baking powder
  • 5 Tbsp. sugar, divided
  • 3/4 cup 2% milk
  • 1 egg, slightly beaten
  • 1/2 tsp. vanilla extract
  • 3 Tbsp. Country Crock® Simply Delicious, divided
  • 3 cups mixed fresh berries or thawed frozen berries, divided

Combine flour, baking powder and 1 tablespoon sugar in medium bowl. Whisk in milk, egg, vanilla and 1 tablespoon melted Country Crock® Simply Delicious. Gently stir in 1 cup berries.

Melt 1 tablespoon Country Crock® Simply Delicious in large nonstick skillet over medium heat. Drop batter into skillet by 1/4 cupfuls. Cook pancakes over medium heat, turning once, until done, about 3 minutes. Set aside and keep warm.

Melt remaining 1 tablespoon Country Crock® Simply Delicious in same skillet. Stir in remaining 4 tablespoons sugar and berries. Cook, stirring occasionally, until heated through and liquid becomes syrupy, about 3 minutes. Serve berries over warm pancakes.*

Super Simple Stir‑Fry

Ingredients:
  • 4 Tbsp. Country Crock® Simply Delicious, divided
  • 1 lb. boneless, skinless chicken breasts, cut into thin strips
  • 1 lb. sliced assorted fresh vegetables, such as carrots, snow peas, broccoli florets, bell peppers and mushrooms
  • 2 cloves garlic, chopped
  • 2 Tbsp. low sodium soy sauce
  • 1/2 tsp. ground ginger
  • 1/4 tsp. crushed red pepper flakes (optional)
  • 2 cups cooked brown rice

Melt 2 tablespoons Country Crock® Simply Delicious in large deep skillet over medium-high heat. Add chicken and brown on both sides; remove and set aside.

Add remaining Country Crock® Simply Delicious and vegetables. Reduce heat to medium and cook vegetables, stirring occasionally, 5 minutes. Return chicken and juices to pan, stir in soy sauce, ginger and red pepper flakes. Cook 5 minutes or until chicken is thoroughly cooked and vegetables are tender.

Serve over brown rice and garnish, if desired with sesame seeds and green onions.

Melt Country Crock® Simply Delicious in large nonstick skillet over medium-high heat. Add eggs and spinach. Cook, stirring occasionally, until spinach has wilted and eggs are thoroughly cooked. Remove from heat.

Evenly divide eggs among tortillas and top each taco with 1 tablespoon cheese. If desired, fold tacos, return to skillet and toast on both sides. Garnish with your favorite taco toppings.
